We like saying "coco loco" instead of Coco Lopez- but take a yellow box cake mix, sub heavy whipping cream for the water, add a handful of coconut flakes and bake as normal. When cooling, poke holes and pour a warmed jar of Coco Lopez (coconut cream you can find at the liquor store) on top, cover and put in fridge overnight.
Carefully scoop it out a day later and place on a bed of cut strawberries. Pour any of the remaining liquid (most of it) on top and then a light frosting of cream cheese. Top the frosting with the last hits of liquid and top with strawberries. Coco Loco man!
