Setting Sun Scallops

When it's too hot to cook, wait until sunset and then make dinner in less than 10 minutes! Scallops soaked in milk for a few hours beforehand, dried, and then pan seared with a pinch of tarragon buttered Panko dust and served with a capicola side. Goes great with a wedge salad and some homemade kettle chips!
