Smoked berbere beef short rib, with a stuffed feta calamari. Dry rub the ribs well with Berbere. Stack the short ribs stacked bone to heel with cherry tomato carrot green onion and leek shavings in a foil pouch and grill.
Serve with Mary Grace potatoes (ie baked in the oven with pats of butter on both sides) and greens and a spoon of onion dip.
